Creamy Butternut Squash Puree

I'm using an average sized organic Butternut Squash.

First I cut in half lengthwise and scooped the seeds outs.

Then I pre-heat my oven to 400 degrees and lay my squash face down in an pan with a couple inches of water.

Bake until the skin of the squash is browned and puckering.

Next remove the meat(I use an ice cream scoop to scoop it out)

This is how much I scooped out.

I filled the blender up about 3/4 of the way and added a cup of water.

This is what the puree looks like

One Squash made 47 ounces of food.
